???? INGREDIENTS (4 servings):
► 400 g tomatoes
► 4 tablespoons of extra virgin olive oil
► 1 clove of garlic, minced
► 1 dried red chili, crushed
► A pinch of sea salt
► 320 g of penne rigate
► A handful of fresh parsley leaves
► Parmesan cheese to garnish

???? METHOD:

First, cut up some tomatoes and drop them in boiling water for a couple of minutes. This helps the skins come off easy.

Once the timer goes off, drain those tomatoes and peel away the skins. Then mash them up real good until it's nice and saucy.

While that's happening, heat up some olive oil in a pan over medium heat. Throw in some garlic cloves and chili peppers and let them cook for a couple of minutes, just until they get fragrant.

Now it's time to add the tomatoes to the pan. Also add a pinch of salt and stir it all around with a wooden spoon. Bring it to a boil, then cover and let it simmer for 15 to 20 minutes, stirring occasionally. This allows the flavors to really develop and the sauce to thicken up.

While that's bubbling away, go ahead and cook up some pasta according to the package directions. Before draining it though, save about a glass of the starchy cooking water.

Once the pasta is ready, drain it straight into the pan with the tomato sauce. Turn the heat back on and stir it all together for about 30 seconds, also adding a few tablespoons of that pasta water. This helps the sauce coat the penne nicely.

Finally, turn off the heat and toss in a handful of fresh parsley. Give it a good mix to combine.

Now just plate up those pasta noodles, topping them with some extra sauce from the pan. And feel free to sprinkle on some Parmesan cheese if you want an extra kick of flavor. Enjoy!
